Blackened Garlic Slices

We have found that charring the outside of garlic cloves and keeping the interior raw allows us to add a toasty note to dishes we were using garlic in. Upon reflection and analysis of this idea, several months later, we believe the technique of charring the outside while keeping the inside raw or just gently cooked will be both delicious and beautiful in application. The first tests to come: celery root, parsnips, carrots, broccoli rabe stems and sweet potatoes.
