And yet we've discovered that summer garlic, with full bulbs that have just begun to develop their feathery paper skin is the ultimate in flavor and texture. The stuff in the farmer's market now is amazing and our local vendor admonished us to keep it in the refrigerator for best quality. The bulbs are are heavy, their aroma intoxicating, and the texure is crisp and delicious.
