Shoko's Chicken Salad | Chicks New Digs

Hi friends!

Steamy Kitchen assistants, Adam and Joanne just spent 5 fun days here - we played in the kitchen with the sous-vide machine, a smoking gun machine, soda maker and pig tails. Yes, we cooked pig tails! Well, specifically, we braised them for 3 hours, then coated them in butter and breadcrumbs and roasted on high until they were crispy crunchy on the outside and fall-off-the.....uh....tail meat.

If you're interested to see what the dish looks like, it's at the bottom of this email. I just couldn't lead my newsletter with a photo of pig tails (they aren't the most beautiful dish, it's hard to make pig tails look good).

But trust us, it was crazy good.
