I am loving baked eggs lately. Not only are they super quick and easy to make, you can add whatever combination of ingredients that you have on hand. I woke up this morning craving bacon and eggs so I made these for my husband and I instead. I loved the crisp and salty bacon with the sweetened tomatoes and the perfectly cooked egg.
