Roast Turkey Sandwich with Cranberry Sauce Posted: 15 Oct 2011 12:02 PM PDT One of my favourite parts of the Thanksgiving dinner has to be enjoying the leftovers for the rest of the week and in particular the turkey leftovers. The first thing that I do with the leftover breast meat is make a roast turkey sandwich and it always includes a healthy hit of cranberry sauce! There is just something magical about the combo of turkey, cranberry sauce, mayonnaise, crisp lettuce and juicy tomatoes and I am hopelessly addicted to it. Over the last week I have enjoyed a number of these sandwiches and for a few of them I decided to play around a bit by making them more like turkey club sandwiches by adding bacon, or in this case peameal bacon. You really cannot go wrong adding bacon to anything and in this sandwich it pairs particularly well with the sweet and tart cranberry sauce. |
